Shopify is the fastest way to a working store, and the trade-off is that you are building inside somebody else's platform. For most retailers that is the right trade - hosting, payments, PCI compliance and checkout are handled, and checkout is the part you least want to build yourself.
Where it gets expensive is apps. Each one solves a problem and adds scripts, subscription cost and another thing that can break on theme update.
